Two brothers have brought a new meaning to food on the go through the development of their pizza van.
Established in recent months, 'The Dough and Arrow Woodfired Pizza' van has gone down a treat for pizza lovers across Fermanagh.
Glen and Andrew McWilliams – who are a butcher and joiner by trade – have taken on this new venture assisted by their wives and sister.
“We are a family-run business. I came up with the idea initially and asked Andrew, to be my business partner. I knew I’d like the business to have that family feel to it."
He added: “We also needed someone to be front of house as such, so the family connection continues. My wife Teri, Andrew’s wife Amy, and our sister Hollie all work within the van too.”
Glen spoke to The Impartial Reporter about where this unusual business idea came from. He said: “Our dream was a stylish, quirky and memorable experience of eating pizza. I always aspired to have my own business, as did my brother, Andrew.”
Indeed, the van is quirky, featuring a woodfired oven at its heart – an item often used to cook pizzas in the most traditional sense.
Glen said: “There was a gap in the market for a unique and quirky food experience featuring a woodfired oven and using as locally sourced products as possible.”
Both being pizza fans, the brothers did some research starting in September of last year. Andrew added: “We searched for a van and did a lot of taste-testing. Before long, The Dough and Arrow Woodfired Pizza came to life and we began trading in May.”
Glen added: “Our van was bought here before sending it off to England to a specialist, to be converted. The van was away for approximately two months. Throughout this time, we were kept updated on the progress with photographs."
Carrying around a working kitchen in the van is quite a task but it is designed so that the workspace has a flow, Glen said.
“Within the van there is everything you could possibly need for pizza making. As it is a small working space, it was designed in such a way that you start at one end of the van and the pizzas make their way around in a process. The oven itself is the centrepiece.
"It is fuelled totally by wood and can cook a pizza in just under two minutes.”
However, pizza vans are not what people are typically used to seeing in Fermanagh, and the mobile business has raised some eyebrows when customers stop by, looking for food van classics.
Glen said: “As the pizza van is totally new to Fermanagh, a lot of people don’t expect it to be what it is.
"They very often just see the van and assume it’s a chip van. We’ve had people ask us for fish and chips, burgers, and even one guy asked us for a crepe!
"It’s funny to see their pleasantly surprised reactions when we explain what it is.”
The van now travels around the county popping up all over the place, with Glen adding: “There’re no two days the same.”
